I know what you are thinking right now: Sara lost her mind! Why is she trying to convince me that a head of cabbage is going to change my life?! But if a cabbage recipe was to do it this one would be it. This isn’t even a real recipe and is so simple you are going to wonder why I am even sharing it; however it is so delicious that I need you all to try to make it. I have a tendency to think most vegetables are just more delicious when they are seasoned and roasted and the humble cabbage is no exception to that rule. This is not your grandma’s boiled cabbage she makes once a year on St Patrick’s Day that you are forced to eat, or the Cabbage Soup fad diet of the late 90’s-early 2000’s, this cabbage is roasted with crispy edges and a creamy interior, and even, dare I say, kid approved.
The star of the show, the one simple thing that changes this cabbage is the seasoning pictured above. If you have a Trader Joe’s, trust me, you should A. Visit them, B. Buy your seasonings there because they are $1.99 and C. Go get this one…21 Seasoning Salute will become your new favorite vegetable seasoning and will turn any boring veggie into a star (amazing on roasted squash as well). It is filled with some more commonly used spices like Onion, Cayenne, Parsley but where the magic happens is in the addition of spices like Marjoram, Orange peel, Tomato granules and Oil of lemon just to name a few. It’s the combo of those spices I would have never thought to use with the everyday spices that makes this 21 Spice Blend sheer genius.
Why cabbage you ask? Well, one, because I married a Ukrainian and cabbage is pretty much a food group in the Ukrainian diet. Two, because I am working on stretching our grocery budget and a head of cabbage is cheap as heck and can easily feed a family. One head is sometimes enough for 2 meals for our family of 4. Three, because I am on a low carbohydrate diet and cabbage is a great low carb side dish. And when you make it crispy like this it reminds me of things I no longer eat very much anymore ,like chips and popcorn! Cabbage is also great for your health, packed in Vitamin C, Beta-carotene, Potassium, high in Fiber, low in Fat and great for lowering blood pressure. With all those benefits why not just give it a try?!
Drum roll please… My Roasted Cabbage recipe
Buy a simple head of white cabbage and with a sharp knife, cut it in half and then core. Chop the cabbage into large wedges and add to a baking sheet. Coat with a good drizzle of Olive Oil (or your favorite baking oil of choice) Liberally season with 21 Seasoning Salute and salt and bake at 450 degree oven for 20-25 mins, check at about 15 mins and add more olive oil if needed.
Trust me it is not too hot or too long and you will thank me when you eat the crispy bits!
It also makes a great sheet pan meal adding by some Chicken sausage or Kielbasa to the pan as well.
