Saturday afternoon I was making my grocery list and cleaning out the fridge and cupboards and ran across some gummy candies that my kids haven’t eaten in my house yet. I was trying to think of something interesting to do with these gummies other then just letting my kiddos go to town (which I’m sure they would have been okay with) and thought I should bake them some cookies.
Now this is not something that usually comes to my mind when I am in the kitchen but sometimes I feel Suzy Homemaker and decided to strap on my apron and whip something up. Saturday happened to be one of those times and thank goodness it was because this recipe is a gem! My kids are through the moon excited to try the cookies before they are even out of the oven, the house smells delicious like fresh baked cookies and my family is happy. MOM WIN!!!
Now not being a baker (as I have discussed in prior posts) there are a few things I do to make my life easier. One I start with a VERY simple recipe, this no fail sugar cookie recipe I am sharing with you guys can be made with or without the gummies and is still delicious. Another thing I do is preheat my oven and make sure it is at temperature prior to adding my first pan of cookies to it. I use a Cookie scoop that can be found on Amazon.com to ensure that my cookies are approximately all the same size so they bake at the same amount of time. And to prevent sticking and burning I line my baking sheet with a Silicone baking mat.
Trust me when I say if this works for this mom it will 100% work for any of you out there as well!
These cookies turned out perfectly light and chewy. The fruit flavors in the gummies were a fun surprising element and the sugar salt mixture on top gave it the perfect finish. My son told me, “Mom this is the best thing you have ever invented!” (Insert proud little mom tear here)
Sour Gummy Cookies
-1 stick softened butter
-3/4 cup granulated sugar
-1 1/4 cup flour
-1/2 tsp baking powder
-1/2 tsp salt
-1 tsp vanilla
-2/3 cup gummy candies of choice (chopped in half)
-1 TBSP sugar salt mixture from bottom of the candy bag
Preheat over to 350. Cream the sugar and butter for about 2 minutes until incorporated then add the egg and vanilla and mix until blended. Add the flour, baking powder and salt combine until dough like. Then fold in the gummy candies and scoop onto cookie sheets. Sprinkle with the sugar mixture from the bottom of the candy bag and bake for 8-10 mins remove once edges are golden brown. Remove immediately and cool on a wire rack before enjoying.
